Recipe: Strawberry Pie

One of my very favorite desserts to make every February around Valentine's Day is a fresh strawberry pie. Not only is it festive, but the strawberries are in season, so it tastes extra delicious!

This is such an easy recipe to make and our daughter loves to make it for her Galentine's party each year - easy to substitute a gluten free crust!

I also shared this recipe in my book, Simple Hospitality on page 37, Invitation #7 “Traveling Kindness.”

INGREDIENTS

Deep dish pie shell (can be gluten-free or regular crust)

1 quart strawberries

2/3 cup of sugar

1 cup of cold water

3 tablespoons of cornstarch

One small package of strawberry Jell-O (I like the sugar free)


DIRECTIONS

Bake and cool a deep dish pie shell as packaging suggests. Slice strawberries and arrange in a pie shell. Set aside.

Mix together in sauce pan - sugar, cold water and cornstarch. Bring to a boil, whisk occasionally. Cook sauce until thick and glossy. Won't take long, stay right there with it so you can watch it carefully. Take off heat to cool.

Pour over fruit. Refrigerate. Serve with whipped cream

In the summer, you can also easily swap out the strawberries and strawberry Jell-O for peaches and peach Jell-O. You can use regular or sugar free Jell-O.
